C'MON, MAN! WHERE CAN YOU BEAT THIS FOR SIX BUCKS?

(Ed.'s Note: We had the good fortune of doing some research at the Cameron County Courthouse and stopped by Amadeo and Sylvia Rodriguez's courthouse coffee shop. As usual, we could not overcome the temptation to partake of the delicious cheese-topped tostadas prepared by "la guera" at the coffee shop. And no, it's not government cheese. There are probably comparable tostadas prepared elsewhere, but we have not come across them yet. And we know soda pop is not the choice of drink of the Brownsville Wellness Coalition, but what the heck, you only live once. These tostadas are to kill for, guys!)

They may have the best tostadas n browntown. But San bene has the best CAPIROTADA known to man.

Every one I know with diabetes is skinny. It is as much about genetics as it is about diet and exercise. An 80 year old man I know who still does brick work is skinny and has diabetes.

If I remember a few years back a McAllen city commissioner died shortly after a marathon run. He was young and physically fit. But there is the myth. He judged himself along with his doctors by the cover of the book, instead of what was inside. Had he had a doctor who understood genetics is a big factor, maybe he would still be alive.

I defy anyone to produce any double blind study which shows diet and exercise is a cure all for weight loss, diabetes, and heart disease. It does not exist. Now, obviously if you eat hamburgers, pizza and fried chicken every day and then start eating stir fried chicken with all sorts of vegitables, and engage in moderate exercise you will lose weight. But maybe not if you have any host of well documented diseases which prevent weight loss.

My heart cath with me being 100lbs overweight has me clean as a whistle. I have never been a bad eater. People are amazed my beans are fat free. I make my tamales with olive oil for maybe 30 years, not manteca.

Now as to these tostadas, they are good for TexMex. But mine are diced fajita meat, my fat free chipotle flavored beans, not too much lettuces and tomato, avocado and then a dried white Mexican cheese which is a bit pungent. This is similar to the soft tacos at La Sibera next to Valley Regional. No yellow cheese.

Eating is about moderation. Tonight is grilled chicken breast made with Rosamary and Garlic, and steamed mix vegitables. I drink water, but on occasion I drink Nicaraguan Horchata which is different than Mexican Horchata.

For me a good meal is steamed yuca and platano macho. It is a meal..

Yellow cheese= NOT a mexican dish
Yellow cheese= twice as much fat as an original white fresh cheese.

77 grams of sugar in 24 Oz bottle of sprite. 4 grams=1 teaspoon of sugar so 77 grams is more than 19 spoonfuls of sugar. One such sprite a day= 61 pounds of sugar in one year. Rotting teeth for starters
