"ATAUD" ASADOR MAKES PIGS AND CABRITO TO DIE FOR

By far one of the of the most eye-catching signs on King's Highway as you head to pay your PUB bills has to be the sign at right advertising "Asadores tipo Ataud."
Translated, it means a coffin-like cooker or grill.
That in itself is intriguing and you imagine a coffin with glowing coals, an image of hell itself.
We stopped and chatted with the owner of the shop, one Marco Garcia.
He said he had just opened his shop and that he had sold his ataudes at the 77 Flea Market before he opened on King's Highway.
Now he said he is trying his hand in a fixed location.
The use of the ataudes is popular in northern Mexico, Garcia said. They are specially popular for the cooking of small pigs, therefore the name "lechones," or milk-fed piglets.
A cabrito, or a kid goat, also fits nicely and Garcia said the results are delicious.
"The meat just melts, it's cooked so well," he said.
Garcia said he has workers in Matamoros build the ataudes for him and then carries them across the bridge for sale here.
"These are very popular in Mexico and they are getting popular here," he said.
For those of you who wonder – as we did – where the coals for the heat go – Garcia said they are placed on a large iron plaque on top f the ataud. The heat travels down and cooks the meat inside the oven.
"The results are delicious," he said. "Estoy a sus ordenes."
